The place where the raw materials are stacked must be cleaned and free from dirt and odor. Frozen beef is naturally thawed at room temperature for 2 days in winter and 1 day in summer. The thawed beef transferred to the workshop must be processed on the same day. Fresh beef entering the factory must be processed on the same day. If frozen beef is processed within 1 week, the storage temperature can be controlled between 0 and 2 °C, and the humidity can be controlled between 86% and 95%.
